STEMMA Soil Sensor readings capping short

I'm using a raspberry pi zero 2 coded in C++ to run the sensor and am noticing that the sensor is capping out at 1015ish moisture for dryness. This is half under the component description.

Image below of data being collected, there's noise that needs working out but the data is capped at 895 which is -120 from my calibration set for 200 wet.

It's a thing. It's from induced noise on the USB port. Are you by any chance running the soil sensor in a setup with USB power?
