Update Readme

Some parts of the readme are outdated.

• The default timeout for it.always is 200ms
• The convergent hook section probably isn't necessary, or we can use @bigtest/interactor as an example.
• Pausing tests was a hack and is deprecated. We should add a note why with the alternative.
