Set jellyfin log level back to Information

This PR changed the default log level of jellyfin from Information to Error:
#1768
Without information log level failed authentication is not getting logged to file, so tools like fail2ban do not work. With the current default logging behaviour in jellyfin and the log rotation, the log files also do not get very large. I would suggest to remove this line from the install script again and leave logging on Information.
