Build: upgrade all services to Node.js 24.x

Update Node.js version requirements across the entire monorepo:
- GitHub Actions workflows (main.yml, deploy-vercel.yml): 20.x → 24.x
- Root package.json: add engines field with &gt;=24.x
- All 16 services: update to 24.x or &gt;=24.x
