Update documentation link for `path-to-regex` with a version tag

Currently, when you click on the link in the documentation for path-to-regex, it takes you to the latest version, which is two major versions ahead of what MSW uses and therefore gives incorrect information as it applies to MSW. The link should probably instead use a version-tagged link, which would currently be https://github.com/pillarjs/path-to-regexp/tree/v6.3.0.

HI, @tim-meredith-acoa. This is a good one.

I think MSW is unlikely to update to the latest version of path-to-regexp due to the work required for that update and also due to the breaking changes in that library.

I've already finished the migration from path-to-regexp to URLPattern in #2209, and it will be released in the next major version of MSW. For now, we shouldn't confuse the readers regarding the path-to-regexp syntax being used.

This sounds like a great first-time pull request! Would you be interested in opening one?
